You can connect an HDMI screen and another one via a USB hub. The USB hub must be able to connect a usb-c port to the laptop.

8 GB DDR4 SO-DIMM
Maximum memory capacity 16GB
*Dual-channel memory support requires at least one SO-DIMM module.
Which would mean that with 16GB there are 2 * 8GB => no, it's full.
