Can a NUC (NUC10i7FNH1) drive the monitor problems, i.e. is the graphics processor of the NUC good enough to reach the maximum resolution (3440x1440)?

The NUC you have contains the Intel UHD Graphics unit, so the following resolutions are possible:

HDMI: 4096x2304@24Hz
DisplayPort: 4096x2304@60Hz

So the answer is yes, if you use a Display Port cable and not HDMI.
