Can the device convert an analogue stereo signal (coming from an RCA plug) into a digital signal? I'm not sure, as the jack plug on the back of the device is labelled "Output". Thanks for your help!

Hi, I hope I understand your question correctly. The front jack input 1 is mono only. You would need the next larger device for stereo signals. The output jacks at the output are also mono, but one each for L and R for monitoring. Only the USB-C output is stereo and digital, e.g. for laptop recording. Hope that helps!
