Can this product be used to connect 2 monitors to a Mac book pro 15" 2017? Thanks in advance

The functionality cannot be guaranteed as your MacBook is rather old. According to the docking station, connecting two monitors works without any problems from the M1 chip, which your MacBook unfortunately does not have.
