Do I have to buy two so that both people who don't understand each other have translations (Polish/English) in real time? And would I have to buy two language packs for Polish separately, what is the additional cost? I would like the offline version to restrict telemetry.

If you both want to translate conversations (Polish/English) at the same time, you will need two WT2 Edge units, each requiring its own headset. The device is designed in such a way that it requires two headsets for two-way recording and playback.
