Does anyone have experience of whether it is still possible to angle the side monitors sufficiently with a 32'' (centre) and two 27'' (left and right) setup?

Hello Terabyte. I would say it doesn't work. I have a 24 inch monitor in the middle and two 27 on the side and it just barely opens. Unless someone has found a trick.
