For example, if I switch on red and then switch off the power for a longer period of time, does it light up red when I switch it on again? (switched socket)

You can do this in the app under Settings, then select the lamp and then select Keep switched on. There you can say exactly which colour and how bright.

As far as I know, the strip switches back to white when it is disconnected from the power supply and reconnected.
