HDMI 2.0 is sufficient for 1440p at 120hz (for 165 hz, HDMI 2.1 or DP 1.2). It's worth noting that the PS5 doesn't have DP.
You need HDMI 2.1 to have VRR (variable image refresh to avoid tearing) on the PS5. I recommend HDMI 2.1.
