I use the keyboard with my MacBook. Is it possible to set the square brackets "[" to be written with the "ü" key as shown on the keyboard? Currently I have to press Opt+5 for this.

Unfortunately not possible with on-board tools (Logi Options.app or macOS). With external tools like Karabiner-Elements (formerly KeyRemap4MacBook) it should work.
