Is it a good idea to run this box with an NVidia GTX 1080 and an Intel Prozi? It's all about gaming. How strong are the limitations or do you notice the lack of Gsync?

The processor doesn't matter. As you wrote correctly, the sync mode with Nvidia is missing. I use it with a 1080 Ti. I've never played with GSync or FreeSync myself, so I don't miss anything. You don't have any direct disadvantages, it's just a normal monitor like we've known since time immemorial.
