Since the S23 Ultra, availability and sales of this case have plummeted, even though demand for its predecessors was very high. Is there a reason for this? Is the design of the S23 Ultra not optimal?

As mentioned above, availability is always an issue. We have made the experience that brands or products that cannot offer consistent availability are less in demand.
