What does the notebook need for performance/graphics so that I can use the full resolution of 3440x1440? Is an HP Pavilion x360 14-dy0657nz enough?

Yes, that's no problem, this resolution is supported via DisplayPort 1.4 as well as HDMI 2.0, but I wouldn't buy this screen at all, because the notebook can also support the much better resolution 3840 x 2160 (UHD 4K), which brings more resolution not only in width but also in height. These monitors have the 4K UHD resolution and are better suited for screen work:
