I don't know if you can talk about "resolution" with a cutting plotter. The contours are cut using vector data.
I think the smallest possible fonts depend on the film material used and the sharpness of the knife.
I can cut very small fonts with my Cameo 4, sometimes the cut parts are so small that the foil particles almost fall out by themselves.
