Could you just leave the plants in the pot, or is it just to make it easier for plants to grow in the first stages?

hello you can leave them in. i also leave them in and it works well. for example, with the peperoncini i simply noticed that if they stay in, the plant doesn't grow as big and when after a while all the peperoncini are taken off the stem, nothing grows back. with herbs like basil and peterli absolutely no problem.
