can the temperature be set completely freely? e.g. for sousvide... can I set 48 or 54 or are there only "predefined" temperatures, e.g. "beef, medium rare" ? if so, in the entire temperature range? thank you!

In sousvide yes in 1° step. In slow cook in 5° increments. It is already pre-programmed depending on the programme (temperature and time), but you can change it manually.
