The delivery includes a replacement castor, but I don't know how to replace it. The mechanism on the existing castor (a black "lever" for engaging) is missing on the replacement castor and I can't remove it from the existing castor.

You need to loosen the holder (red) in which the roller is located and attach it to the new roller. This should work well with a normal kitchen knife and a moderate amount of force.
