Which threads are possible / What data do I have to pay attention to when buying threads? E.g. I have an old roll with the designation Nm 100/5.

It is recommended to use a good quality sewing thread. Polyester or cotton is best. Older sewing threads may break or the thread may no longer be optimally twisted, resulting in a less than optimal stitch pattern.
