Best that I can understand is that the SONY wh1000xm5 is a Bluetooth noise-cancelling head-phone. If it has a normal 3.5mm jack cable, then the V-Moda just inserts into the headphone jack plug as a y-connector. V-Moda being a purely wired connection, the other two ends of the y-connector fit into any device with mic and headphone 3.5mm plugs. The X-Moda microphone is attached right under the headphone jack with stiff wire support about 10cm long to bring it close to your mouth. Works perfectly on my V-Moda headphone.

I don't have a direct answer but you may want to also look at the Antlion ModMic. It's also an add-on mic but with a separate cable that is much easier to install with a Sennheiser.
