Best that I can understand is that the SONY wh1000xm5 is a Bluetooth noise-cancelling head-phone.
If it has a normal 3.5mm jack cable, then the V-Moda just inserts into the headphone jack plug as a y-connector.
V-Moda being a purely wired connection, the other two ends of the y-connector fit into any device with mic and headphone 3.5mm plugs.
The X-Moda microphone is attached right under the headphone jack with stiff wire support about 10cm long to bring it close to your mouth.
Works perfectly on my V-Moda headphone.
If you already have the first generation v-moda boom pro, then stick with it.
It won't get any better, rather the opposite is the case.

The only candidate that is better in terms of microphone quality is the corsair HS 80.
It should work, but you will probably need a Y adapter for the controller.
works perfectly with my Sony WH-1000XM3 and PS4 controller.
I don't have a direct answer but you may want to also look at the Antlion ModMic. It's also an add-on mic but with a separate cable that is much easier to install with a Sennheiser.
