According to the specification, this router is eSIM-compatible, but the user guide on the Sonim-tech website says nothing about eSIM. Is the router eSIM compatible, if so with all common suppliers swisscom, redbull etc.?

I was able to do a search and the manufacturer actually states a NANO SIM slot, so not eSIM capable. The correction has already been requested.
