Can the fibre optic cable be connected directly to the UDM Pro without using the Sunrise Internet Box? This seems to work for Swisscom but also for Sunrise? If so, does anyone know how to set this up?

People, move away from Sunrise, Salt, Swisscom and so on. Even just because they use PON. Init7 does it right and uses direct connections. It's also more geared towards what's coming in the future.

I tested this with my provider (Quickline) last week. The WAN connection directly via fibre does not work there. But it's up to my provider, as they don't allow this. You would have to check with Sunrise.
