Do I also have to put liquid metal between the cooler and the CPU or can I just use thermal paste there? Thank you very much!

You can then use thermal paste again as usual.

If you take normal WLP, you could actually leave it alone. unless the WLP is of a correspondingly high quality and is applied better than the TIM from Intel. Therefore, LM is actually the better choice.
