I would use the zyxel nr5101 as a LAN-GATEWAY, set it in bridge mode, turn off the WLAN from the nr5101.
Connect one AX3000 directly with rj45 cable.
The other AX3000s connect wirelessly to an invisible WLAN network.
After 24h or 48h, the various AX3000s automatically connect to the best available device in the vicinity.
The established XIAOMI network is visible in the XIAOMI app.
Both devices have WIFI 6 as standard
I don't know if they are compatible with each other

I would like to connect an AX3000 to the Salt fibrebox with a Lan cable and then connect the second AX3000 to the first AX3000 with another Lan cable. Then I want to switch off the WIFI 5 from the Salt fibrebox and use the WIFI 6 from the two AX3000s instead. In addition, 3 devices are connected directly to the Salt fibre box via Lan cable (should remain so) and a PC should be connected to the second AX3000 via Lan cable.

Does that work?

You don't have to change anything at all on the Zyxel NE5101, you connect the first AX3000 via LAN cable to the blue Ethernet interface of the first AX3000, the WLAN on the Zyxel NR5101 is switched off (it's pretty poor anyway and doesn't need it anymore, the AX3000 WLAN is much better) and the AX3000 routers are then set up. The first one gets the Internet from the NR5101 via the LAN cable and the second AX3000 is simply integrated as an additional mesh router into the existing WLAN mesh system of the first AX3000 mesh router. The setup is done from the first AX3000 Mesh Router either with the app or via its IP address, it is super easy.
