Hello, I'm looking for a processor but I know my way around. This is the old version "Intel Core i7-6700K" and I would like to know if I can replace it with this Intel Core i7-12700K?

You would also have to buy a new motherboard because the 12700k has a lga 1700.

Why not just buy the 13700k?

No, you can't. You always have to check whether the sockets are the same and the motherboard supports the CPU.
As a tip, use an online configurator to test.
