How can I connect 2 of the Fritz repeaters to my Sunrise fibre modem and use the mesh system at the same time?

This is not possible. This is clearly described by AVM. https://avm.de/mesh
However, you can operate the fibre modem in bridge mode (IPv4 is required) and connect a Fritzbox behind the fibre modem. This is then the basis for the mesh.
