How to select Wi-Fi 6 mode 802.11ax? Only a, an & ac seem to be available for selection in the separate 5GHz channel.

You have 3 choices
802.11ax only
802.11a/n/ac mixed
802.11a/n/ac/ax mixed

Both for the 2.4Ghz and 5Ghz network.

Can also be set in the app. "TP-Link Tether
