I am looking to "replace" my 256 SSD soldered to the motherboard of my iMac 27 mid 2020 with an external 2TO SSD in a case with thunderbolt 3. It would become my boot drive. What type of fast SSD as the original on the motherboard would you recommend? Thanks a lot!

This type of SSD is totally suitable, although you'll need to check that the Heatsink doesn't prevent it from being installed in an external enclosure. If that's the case, you'd be better off going for a version without the original cooler!
