I am planning to upgrade the sound of my 2017 SONY A1 TV, but I would like to use the speakers already built into the TV instead of a centre speaker in order to maintain the clean overall picture - can this be done somehow with an AV receiver (or this one) by buying only 4.1 speakers (without a centre) instead of 5.1 and then setting the TV/AV receiver accordingly?

(Fremdsprächig - It) In my opinion this should not be a problem, I currently use the STR-DH590 with a Sony KD55X800 TV and the AV receiver automatically uses the TV speakers together with the 5.1 to develop a better sound. I'm not a technician, but if you use a 4.1 instead of the 5.1, the TV speakers will also be involved in this case to improve the overall sound.
