I currently have 2 Fritzbox repeaters connected via LAN bridge to my Sunrise Internet box. The WLAN is suboptimal because the strongest band is probably not always selected. I would therefore like to set up a mesh network. Can the Fritz!Repeater 3000 do this, as I have seen that it can also be used as an access point? Or do I need a Fritz! router, which is then connected as a "bridge" behind the Sunrise Internet Box?

No, that is not possible. AVM writes on the Mesh Info page: The central point of the mesh is always your FRITZ!Box.
