I have a Turris Omnia 2. Now I have moved and no longer have a fibre optic line, but good old copper again^^. Question: Can I use the adapter to feed my Turris with the internet signal from the copper line?

No, that is not possible. You need a G.fast-capable router that can deliver the Internet signal directly to the WAN socket of your own router as a gateway, e.g. Vigor 166 Gen2 or Zyxel XMG3927.
