I have three questions and would be very happy if someone could answer them. My questions are, what exactly is a bios update?, Will the Ryzen 5 3600 run without this update? So if I upgrade the processor I don't have to do anything? And what exactly is the difference between the Gigabyte Aorus Pro and the Aorus Elite?

Good day
The BIOS roughly describes the FIrmware, i.e. the basic settings, how the mobo etc. interact. If something goes wrong there, the pc is in trouble...
It is important to note that the pc must not be switched off under any circumstances during the BIOS update!
When updating, you must also follow the manufacturer's bios specifications.
Finally, however, a Bios update is very simple: start the PC and press delete constantly.
The manufacturers usually have instructions with the bios updates.

The 3600 should also work without an update, since the mainboards of the 2gen usually or almost always have the latest firmware on them.
However, the ram support is usually improved with later bios updates.

The mainboards have many differences, but I think the most important ones are:
AMP-up audio and 2 nvme coolers....
I would also google if the pcie x16 slots are configured differently and if there are any performance losses.

if you only use the pc for gaming, i.e. only gpu without anything else like wlan card, you can also consider an itx board. i use b450i and with the latest bios update various xmp profiles run stable for my 2700.
Another important tip, when buying the mainboard, pay attention to the qvl of the ram! This can have greater performance losses than you think, emphasis on can.
With the ram I would take 3200c16 or 3600c18, these should be sufficient in terms of performance, but it is important to activate the xmp profile in the bios. And only if the gpu is better than an rtx 2070/5700xt. I would not use 2400c16 ram, because it is sometimes too slow and you have micro stutter.

Bios is software that is permanently stored in memory and functions as the operating system of the mainboard. For compatibility with the Ryzen 5 processors, such a firmware update must be installed beforehand so that the processor is recognised. At least that's how it was for me. The main difference between pro and elite is the chipset (newer generation). On the Elite, the processor should already be compatible ex works.
