I would like to install an SSD for the operating system and a second one for data storage and games. What would you recommend, an SSD or a conventional HDD?

I have it exactly the same way!
SSD for OS, HDD for games and NAS (HDDs) for data.
For a few games, an SSD is almost _necessary_ - because of the loading times. But an old SSD 840 Pro will do for that.

The WD Black delivers (according to Samsung Magician):
Sequential R/W: 240 MB/s
Random (IOPS) R: 732 / W: 1464

Comparison to SSD 970 EVO 500GB (NVMe):
Sequential: R: 3,545 MB/s; W: 2,512 MB/s
IOPS: R: 273925 / W: 173828
