In the BIOS, the PC components are all displayed at -55°C. I did a BIOS update - still the same. Does anyone know how I can fix this error? HWMonitor shows me the temperatures correctly, so the sensors should be working.

I would do now:

how old is the MB? freshly bought, or already in use for a few weeks/months?

- if new and still within the DOA time frame ... return directly to a digitec branch & get a new replacement MB (call digitec support for case beforehand [direct branch tel. no. will not be disclosed] and/or register the case online).

- if already older and no DOA anymore...
. since hwmonitor shows correct values & the MB has not yet smoked (= sensors ok), possibly a BIOS software bug...
. did the error occur from now on without any action on your part?
. or only after a bios or firmware update?
. if after a BIOS/FW update, try to downgrade to the previously working BIOS version (usually not recommended by the MB manufacturers, but what should you do?).
- If you are not on the latest BIOS version, download it and update it (https://www.gigabyte.com/Motherboar...).
. if you don't want to upgrade/downgrade the BIOS (yet), you might want to do a full BIOS reset first (online manual page 20, pt. 16: https://images-eu.ssl-images-amazon.com/images...).

if all this does not help... either ignore (correct values are reported to the OS & the fan control), or replace the MB. there is not much online about this...
