A matter of opinion.
I have deactivated 10 pre-installed apps. This is within reason,
Various Samsung apps cannot be deactivated, including Samsung Cloud & Galaxy Store (not so bad, logging in is not mandatory + the other Samsung apps). Samsung Daily Board can be deactivated.
Regarding fast processor: Web browser and Google Docs / Sheets / Keep etc run reasonably smoothly, but a little patience is required.

Relatively little, but the processor is not exactly "fast" either.

There's practically none as far as I've seen. I have 2 for my kids, had to uninstall 0 apps for it to be a 100% working tablet.

I think there is surprisingly little bloatware installed.
