UniFi Video G3-Flex and all other UniFi cameras require UniFi Protect as a controller. This is currently available on the UDM-Pro, UniFi Cloud Key Plus and UniFi Protect Network Video Recorder. So yes, the setup works. It is best to have a switch that can also do PoE+, then you have the least cabling effort.

I operate it with a cloud key 2 plus, which works great. I just don't have a Fritz, but I guess that's just the router....
