Yes, that is possible. I bought a second charging dock (from the predecessor S5) and placed it on the second floor. Now I only have to carry the robot vacuum cleaner to each floor. You don't have to set anything up either, just connect the charging dock to the power and you're done.
The Roborock can also be set up via Hotspot. Bluetooth is not possible. It doesn't need an internet connection to vacuum, you can also send it off with the Dtarte cleaning button on the robot. An even cheaper model would be, for example, the Dreame D9, which offers equally good navigation and cleaning at an even lower price. Xiaomi Dreame D9 Roborock, Dreame and Xiaomi hoover robots are technically very similar and are all very well made.
Yes, the troughput can also be adjusted individually in the Roborock app. E.g. you could set it to low water flow for rooms with wooden floor and to high water flow for ceramic or stone tiles. Besides, the amout of water that is dripped onto the mopping pad is no way enough to damage wooden floors. So I would not worry too much. I woudl also advise you to consider buying the Roborock S6 MaxV, it has the same mopping feature but much more advanced 3D obstacle recognition navigation. The price is a bit higher, but if you have the need for better object recognition and navigation, this may be a good option: Roborock S6 MaxV

I haven't tested it directly, but since the s5 max "scans" the environment with a laser, I don't think it's a problem (at dusk, under the bed, at least it can find its way around). Be careful with black, delicate objects, as it only detects by touch and could knock them over or move them (vase, wobbly keyboard stand or whatever). The laser has difficulties with dark surfaces).

The S5 Max is the latest model in the Roborock range. The S5 Max also comes with a large water tank and the charging station is not as high quality as the S6.
Hoi. I ordered the black Roborock S5 Max in mid-March this year. It has the new laser tower with bumper, so it's the new 2020 model. I am also very satisfied. Got the latest firmware update this week where the floor map function was added. Now works wonderfully with multiple maps (up to 4 maps / floors).
This is an integrated shock sensor that detects obstacles. In the first models of the S5 Max, this was not included in the laser tower. It is present again in the new models --> The laser sensor is movable and can detect corresponding obstacles - for example when vacuuming under furniture.
