Hello,
I wanted a more manageable pan than my existing iron pans, so I decided on the 26 cm version as a supplement. It will be used for pancakes, fried eggs, farmers' breakfasts, etc.
Great pan, except for the two negative points, which are easy to remedy.
Preparation
Remove the oily forging dirt from the appliance using spirit and an old left sock (freshly washed🙂). This saves a soiled sink.
Now grind a light rounding bevel on all edges using 120 grit abrasive cloth.
This takes about 5 minutes.
My specimen had a localised bulge on the underside of the pan base, which was the cause of the tilting. Angle grinder with flap disc or belt grinder? Both too blatant. I don't have an eccentric sander and the orbital sander is too large for me, so I sanded it away by hand (15 min).
Now I sanded the whole pan again with 320 grit (5 min.) so that kitchen paper doesn't fluff and surfaces don't get scratched.
Now I use the right sock with Spiritus Sanctus.
I then scrubbed the pan with hot water and washing-up liquid, dried it and put it in the oven at 60 degrees for 5 minutes.
Now I rubbed it very thinly with fat (I tried clarified butter) & put it back in the oven. The oven is now heated to maximum heat for 1 hour and then simply switched off. The pan cools slowly in the oven. Finally ready😀
There are certainly iron pans that don't require this "effort" & are cheaper.
But I still think it's great because it's so beautifully mobile.

great iron pan, to the pros and cons I can not say anything yet, burn them in just, but is good in the hand, looking forward to my first Staek, still takes a weile, would like to do everything right, so I take my time with the burn in
