We are now very satisfied with the pan. At the beginning, the frustration was high, because almost all dishes are burned. Various tips from the Internet have all helped nothing. Since we have the hang of it, the dishes succeed very well.
We have to heat up the pan with or without oil for about 7 minutes on level 5 of 9. Only then do we put the food in the pan and fry it on level 4 or 5.
At level 6 or higher, the fat burns on the bottom of the pan and leaves a tough, golden brown film, which does not soak and is difficult to remove.
If we stay below level 6, everything succeeds and it's a sturdy, fancy pan, complete with no plastic.

All in all, very good for frying meat and vegetables, less suitable for fried eggs. I haven't tried fish yet, but I think it's good, as was the cordon bleu the other day - very good browning achieved.
I use the pan on a gas barbecue and the drawback is that the handle is hot at the bottom and very slippery at the top and impossible to hold with wet hands. You have to grip it extremely tightly
Cleaning, it happens quickly that something burns onto the steel surface. But I got everything scrubbed out.

I love this steel pan from WMF. It is one of the few pans where the handle is not screwed into the pan. This makes it easier to clean and it doesn't stick or get stuck
Very good pan to fry meat. The heat distribution is good and it is fried evenly. For everything else unfortunately unsuitable. Potatoes or pasta stick even if you add oil very quickly to the bottom.
Before the pan can be cleaned, it must be filled with water and placed on the still warm stove top so that the frying residues are loosened.

Great pan, you have to know how to cook with it. High rim, ideal for more volume 😄
Highly recommended, just always pay attention to the price, which varies greatly.
