Yes, it is possible to connect Apple AirPods to the TV via Bluetooth. You need to set the AirPods to Bluetooth pairing mode (press and hold the button on the case until the LED flashes white) and then select and connect the AirPods in the TV menu under Settings > Sound > Bluetooth speaker list. You can then listen to the TV sound via the AirPods. Regarding the Bluewin app: The TV does not support direct installation or access to the Bluewin app. Samsung Smart TVs from 2018 like this one usually do not have a Bluewin app in the App Store. You can only transfer Bluewin content to the TV via external devices (e.g. smartphone, tablet or streaming box), not directly via the TV itself.

Hello AppleTV (watch movies) app is on it but I can't answer the question about Airplay 2. But I assume that it is. An AppleTV box offers you the possibility to install apps from the Apple Store, which as far as I know you can't do on the TV. For example, I use the AppleTV box to watch TV with TV7 (Fiber7).

A wall mount is not included. VESA 200x200 is required. Manufacturer's page: https://www.samsung.com/ch/tvs/uhd-nu7400/UE55NU7400UXZG/ Manual German 7-8 http://downloadcenter.samsung.com/content/EM/201803/20180330125559223/BN68-09006A-01_UNU7400H_ZG_L04_180306.0.pdf

So far, I have been able to connect every Bluetooth-capable device. However, I have only tried it with music boxes so far. But I see no reason why it shouldn't work with headphones. Establishing the connection is very easy.

The TV is OK for the price. However, the picture is of course poor compared to a (more expensive) OLED. Picture is weak from the side (LED). Operation is good. P/L is very good. But I would rather buy a cheap LG OLED. Much better.
