Does the charging current at the USB-C output regulate itself automatically and is adapted to the device to be charged? For example, can I charge headphones without damaging the battery or an iPhone?
You don't have to worry about that. A device only draws as much current as it needs. In addition, a device with a battery also has control/charging electronics that should prevent too much.
