Does the Xiaomi mi 11 ultra also support esim? I thought I read that this is not supported.

Yes, eSIM is not supported by the Xiaomi Mi 11 Ultra. There used to be Xiaomi phones that could do this, but it was only possible with Chinese providers. The Mi 5 actually had this function.
