I'm just wondering; if the 1070Ti - why not the 1080, which currently costs only a little more. Or would you have to change the whole system for a 1080 anyway?

Yes, I'm aware that the 8700 is not overclockable, but I don't think it's necessary for my conditions.

Since I'm new to the (gaming) PC building business, I have a few general questions:
-Do I need to buy any cables, tools, screws or anything else to go with it.
-Did I forget anything in my configuration (apart from a Windows licence)?
-Do all components fit together

So SSD and HDD are good. The power supply unit is not good at all. Extremely bad. Poor efficiency, no cable management and cheap. That's the component where you definitely shouldn't save money. I would take one of these:
be quiet! Straight Power 10 CM (600W)
Seasonic Focus Plus 550 Platinum (550W)

As for the graphics card, I'd go for a 1070ti:
Gigabyte GeForce GTX 1070 Ti Gaming (8GB, High End)
ASUS Cerberus GTX 1070 Ti A8G (8GB, High End)

Ram I would also take at least such with 2666mhz or 3000mhz from Vengeance LPX.

The 8700 is not overclockable, are you aware of that? If so, intel still only comes with a pretty lousy cooler.
I would at least use something like a bequiet Pure Rock.
