I have another specific question: Can the Fritzbox 5490 Fiber replace the Salt Box? I only want 1 device and the functionality of the Fritzbox (e.g. for smart thermostats). Why connect 2 devices for such a simple case, which both eat up power and in the worst case do not interact 100% here and there?

No, only the "Fiber Box" provided by Salt is compatible with the "Salt Fiber" offer.
