No, this is not possible. The Aqara sensor sends the data via ZigBee and these must be received and processed by a corresponding device. The hub is responsible for this. The hub can then be integrated into the Apple Home app if it is HomeKit-capable. The app can then display the data. I don't know if the hub can do historical tracking.

Probably no. My Aqara Hub is not even compatible with Philips HUE. Aqara has its own Zigbee network and is only compatible with Aqara certified products. If you are lucky, you can connect the different systems with Apple HomeKit and possibly control them together in an automated way. This is exactly what will happen with the Danfoss Ally Gateway. And for Zigbee in a house, you definitely need Zigbee active repeaters because of the walls and distances.
This thing is only a room climate sensor that transmits the measured values to a Zigbee Hub or Bridge via the Zigbee protocol. It has no direct connection to services such as Google Home. Whether Google Home can evaluate the data depends on whether the Zigbee Bridge you are using has a Google Home integration, and whether this integration also transmits sensor values.
